Spice up your life.

imageOnce a week, I have either friends or family around for dinner.
I feel that I need to give my daughter a taste of family life.
She needs to learn and feel how sitting around the table to have meals is a social event not just a means to eat.
It also gives her a chance to show off her wonderful table manners – something that I’m strict about, to me there is nothing worse than bad manors when eating.

Today against my better judgement as I’m feeling a tad under the weather, I’m cooking a curry for a few friends.
I’ve become a little famous between my friends for this dish.
I thought it was about time I shared it with them so they can cook it for themselves as I won’t always be around when they fancy it.

So here goes, a dish to spice up your life.

Ingredients.
Cooking oil.
2 1/2 IBS of chicken diced.
I large onion.
3-4 cloves garlic, coarsely chopped ( or lazy garlic)
1 inch of root ginger, coarsely chopped ( or lazy ginger)
1 tsp ground turmeric.
2 tsps ground coriander.
1 1/2 taps ground cumin.
2 tsps chilli powder (I use more)
I small tin of chopped tomatoes.
180ml of water.
4/6 whole chillies.
1tsp garam masala.
2 tbsps chopped coriander leaves.

How to cook.

Dice the chicken.

Place the onion, garlic and ginger into a electric food processor, blend until a smooth paste. ( you may need to add a tiny amount of water to the mix)

Heat the oil.
Add the liquidised ingredients.
Stir and fry for 5-6 minutes.
Add the spices ( not the garam masala)

And stir and fry for 5 minutes.
Add half the can of chopped tomatoes.
Add the diced chicken and stir and cook until the chicken changes colour.
Add the rest of the tomatoes.
Add the water and bring to the boil.
Leave to simmer for 15 minutes, stirring occasionally.
Add the whole or chopped chillies and the garam masala and simmer for 5 minutes.

Remove the pan from the heat and add the chopped coriander leaves.

Serve with rice.
